A word on weights…

You may notice that many of my recipe measurements are given in weight.  Measuring by weight, especially in baking where precision can be crucial, is the most accurate. However, I try whenever possible to include volume equivalents as well for ease and convenience.

If you do a lot of baking, my tip is to do as the pros do and get yourself a digital scale. It need not set you back too much (about $20 and up) and will go a long way in helping you achieve more consistent and yummy results in the kitchen. Give it a try!
